What are ultra-processed foods and how are they regulated?
The consumption of extremely-processed ingredients has
extended in current a long time and, at the same time, the information and
messages claiming that they may be dangerous to health have increased. However,
there are nonetheless many gaps in its definition and in phrases of the medical
basis for its health outcomes.
This is stated in the document Information on
"ultra-processed" food: myths and realities published by way of the
Department of Cultivation, Livestock, Fisheries and Food of the Generalitat of
Catalonia in collaboration with the 'Observatory of scientific verbal exchange
of the Pompeu Fabra University. In this second issue of the Food and
Communication series, a collection of professionals from numerous fields, with
representatives of the agri-meals enterprise and the Administration, speak the
problems and challenges posed by using information on ultra-excessive processed
foods.
Where does the trouble of extremely-processed meals come
from? What suggestions does this have for the food industry? We give an
explanation for it to you below.
LEGAL GAP
One of the main troubles with information on ultra-processed
ingredients is the criminal vacuum. Currently there's no criminal category or
legal definition regarding ultra-processed meals, now not best in Spain,
however also inside the European Union or in maximum countries within the
global.
DEFINITION OF PROCESSING AND PREPARED FOODS
However, there are reputable definitions for processed and
processed ingredients.
On the only hand, law 852/2004 of the European Commission
defines transformation (or transformation) as any movement that notably alters
the preliminary product.
On the alternative hand, the US Food and Drug Administration
(FDA) defines processed meals as that which has undergone modifications in its
herbal nation and the least processed as one which retains maximum of its
physical, chemical, and sensory houses. And dietary. . It also adds that
processing, which include the addition of substances, can lessen, increase or
no longer have an effect on the dietary traits of unprocessed merchandise.
CLASSIFICATION OF THE MOST USED TREATMENTS
The maximum broadly used system to categorise foods in
keeping with their diploma of processing is NOVA, from the School of Public
Health of the University of São Paulo, proposed with the aid of Carlos Monteiro
in 2009. Monteiro defines extremely-processed foods as "Industrial formulations
made out of of materials acquired from meals or synthesized from other natural
resources, which normally incorporate very little intact meals, and that are
commonly high in fats, salt and sugar, as well as containing little nutritional
fiber, proteins, micronutrients and bioactive compounds ”.
Currently, the Nutrition and Agriculture Organization of the United Nations (FAO) accepts and acknowledges the validity of the NOVA category, and friends the time period ultra-processed with expressions consisting of "speedy meals" or "junk meals".

LIMITATIONS OF THE NOVA SYSTEM
One of the bounds of this definition in keeping with Mr.
Carmen Vidal Carou (Professor of Nutrition and Bromatology on the University of
Barcelona) is that it does not define quantitative limits for crucial
nutrients, that is, 'it does no longer imply from what amount of salt , sugar
or fat could be taken into consideration extremely-processed meals. Another
objection to Monteiro's definition is that it makes meals additives negative.
In this experience, Xavier Pera (accountable for meals
safety and pleasant at AECOC) explains that the abuse of the time period and
its well-known use sends the incorrect message while he presents meals
processing or the usage of generation as some thing negative or to be avoided.
According to Pera, this reinforces the phobias associated with anything that
has an industrial foundation or using safe additives within the food industry.
WHAT IS AESAN SAYING?
In this feel, in 2020, the AESAN scientific committee
declared that the time period ought to not be related to the depth of the
degree of processing, nor with a low nutritional fine, and that, consistent
with cutting-edge policies, maximum of the so-called meals ultra-processed
meals would fall beneath the criminal definition of processed ingredients.
WHAT DOES THE EUROPEAN PARLIAMENT SAY?
In early 2020, a question changed into posed to the European
Union Parliament on the criminal definition of extremely-processed meals, to
which the Commission answered that it'd explore as part of the 'farm to fork'
approach. However, no reference to extremely-processed meals was included while
it turned into posted.
